Stovetop Frittata with Beet Greens & Goats Cheese

8 eggs

1/3 cup yogurt

1 brown onion, sliced

1-2 garlic cloves, chopped

1 handful of beet greens, roughly chopped

100g fresh goats cheese (chèvre)

coconut oil for cooking

In a large bowl, beat eggs and yogurt together until well combined. 

Heat a 22cm frypan over medium heat and melt 1tbs coconut oil. Add the sliced onions and garlic, and sauté for 3-4 minutes or until softened. Then add the chopped beet greens and cook until just wilted. 

Using a spatula, evenly distribute the vegetables around the base of the pan, then pour the egg mixture over the top. Allow to cook over medium heat, and as it cooks, using a spatula, slowly pull the egg mixture away from the edge of the pan, to allow the uncooked eggs to move to the base of the pan. 

Once the mixture starts to set, about 5-7 minutes, crumble the soft goats cheese on top, lower the heat, cover with a lid, and allow to cook over a low heat for another 7 minutes or until the frittata is set and puffs up.

Remove from the heat and leave to sit for at least 3 minutes, then serve. 


Stuffed Danish Pancakes with Spiced Apples (also known as Ebelskivers!)

1 cup buckwheat flour

1 1/4 tsp baking soda

1 egg

3/4 cup coconut milk

1/2 cup water

1 apple, diced

1 tbs coconut sugar

1/2 tsp cinnamon

First prepare the apples. Saute the diced apples with 2 tsp coconut oil, the coconut sugar and cinnamon for 5 minutes or until just softened. Remove from the heat and put aside. 

Sift together the buckwheat flour and baking soda. 

In a separate bowl, whisk together the coconut milk, water and egg. Then stir through the sifted flour mixture. 

Heat the danish pancake pan over medium heat, then add 2 tsp of pancake mixture to each of the pancake holes. Place 1 tsp of the apples on top of each pancake, then top with 1-2 tsp more of the pancake batter. Cook for about 4 minutes, then using two skewers, gently flip the pancakes over and continue to cook on the other side for another 3-4 minutes, or until browned.
